It’s that time of year, where everyone is wanting to eat healthier. Don’t worry, this isn’t too healthy — just a little healthy. I’m not a huge fan of cooked kale, but I do enjoy it raw. Make sure to prepare this salad ahead of time to give the kale time to relax in the dressing. 

Salad Ingredients: 

4 cups chopped raw kale

1 large apple — diced

¼ cup diced red onion

¼ cup dried cranberries 


¼ cup Greek yogurt 

¼ cup mayonnaise

1 tablespoon poppy seeds 

Juice of one clementine 

Salt and Pepper to taste.



1. Mix all dressing ingredients together in a small bowl. 

2. Mix all salad ingredients together in a large bowl.

3. Pour dressing over salad. 

4. Let set for no less than 30 minutes for the kale to soften.
